The Chef

Andrea Alessandrelli was born a few kilometres from here and chose to return here after a long journey that took him to Umbria, the Amalfi Coast, Denmark and London. Today he manages a young, inquisitive and talented crew, who are certain that the horizon of contemporary cuisine is not too far away from here or in the future.
Everything we need is around us and in the culture that has been passed down to us.

“I would like to become one of those people who will change the way we approach vegetarian cooking. For me it is a cuisine that can be deceiving to the eye, astonishing to the mind, satisfying to the palate; that uses only ingredients and raw materials from certified organic production or cultivation and that enhances them by always respecting their seasonality. The bio-agricultural tasting route wants you to discover simple vegetables, herbs, flowers and wild fruits, tubers and iconic cheeses through new eyes.”

“The more my love of cooking took me away from home, the more the desire to return grew; the more I learned about the most innovative techniques alongside the great international masters, the more I became passionate about the traditional cuisine of the Marche. This tasting route is my revolution of tradition: dishes from the Marche region which have been handed down by farmers, shepherds and fishermen, cooked using ancestral cooking techniques and interpreted in a contemporary way. The raw materials are almost exclusively local: the sea, the vegetable garden, the farmyards, the woods.”
